Central Market is gearing up for its annual Hatch Chile Festival with a recipe contest, pork tenderloin apples classes, and a new chile-themed cookbook starting August 17. The festival, which spans two different weekends, celebrates the arrival of more than eight truckloads of the chile from Hatch, New Mexico. The festival runs Friday, August 21 through Sunday, August 23 and Friday, August 28 through Sunday, August 30.

For stir fry with an authentic Chinese touch, try using their velveting technique! Prepare a mixture of corn starch, egg whites, seasonings and sherry and set your pork tenderloin crock pot, chicken or shrimp in it for about half an hour. Then, blanch it in hot oil or boiling water for shiny, tender and delicious restaurant quality stir fry.

Purina is a company which sells their pet products in both pet stores and grocery stores. They offer dog and cat food roast pork as well as treats and long lasting chews. While I do not recommend their dog food as I prefer a higher quality brand, their chews are long lasting for an occasional treat for your dog.

Very interesting scenery. A lot of festival goers like to hang flags from lawn chairs so that their friends can find them quicker in large crowds. Among the cooler ones I saw on Friday: one with half the cast of South Park sewn on, several NFL teams including the Jets and the Saints, a British and a Dominican Republic flag side by side, one that said AC/DC on it, and a T-Shirt on a stick. The best one though? A multi-colored number that had one word: yogurt. Nothing else, just yogurt. Only in Austin folks. Only in Austin.

A great way to get familiar with El Farol's menu, and Puerto Rican food in general, is to order the Combination Plate. At $9.95, it's one of the most expensive things on the menu, and can easily feed two (especially if an order of Mofongo is added). It consists of roast pork, fried pork (chicharrones), fried plantains, fried chicken (some of the best in the city), Arroz con Gandules, and beans.
