Wow! Excitement in many forms with all the new things happening at Dat's Italian. First of all there is a newsletter which is how I learned 'what's cooking' at Dat's Italian. The newsletter is great stewing beef broccoli you can sign up for it at their website.

Why that's advisable: Variety is important because it prevents boredom, which is a cause for giving up on dieting. Nobody wants to eat grilled chicken with steamed vegetables every meal, and if you try to force yourself to comply, you'll end up eating a slow cooker braising steak before the end of the week.

I recommend you try it sometime and sometime soon. Go to the store and buy the basic things you want in a stew, maybe try ONE new thing. You don't want to experiment with more than one thing at a time. Cut your veggies, throw them in the cooker and let it do its thing. That is the beauty of the slow cooker is that it does all the work stewing steak for you!

Shellfish does not combine well with long cooking times, so if you want to add some to a stew or soup recipe, add it near the end of the cooking time so it can warm through. Shrimp can be added to crockpot chowders, soups or stews. You can either add them in their shells or de-shelled. Gumbo and jambalaya are slow cooker braising steak and you can add some tasty shrimp to these, whether you make them on the stove or slow cook them. Clams and mussels are good for making stews, especially when you use a tomato or white wine based sauce.

When you get home fish out the cloves and peppercorns, set aside half of everything for later in the week, make yourself a plate of food, add a little mustard on the side if you like and enjoy! It's so tender you don't have to worry about the traditional cut-thin-slices-against-the-grain rule.

Once you have each of the items ready, just put them in a 3-4 quart crockpot. Cover and prepare dinner on Lower temperature for 8 hours. Serve it with rice or pasta together, and you'll have a satisfying food.

If you really want to kick the flavor up a notch, take a few extra minutes to make some "gravy" with the drippings from the crock pot. When you remove the meat, pour the excess liquid into a bowl through a strainer. Put that liquid into a pot on the stove, braised meat for tacos gently boil it until the liquid volume has reduced by roughly half. Add a few tablespoons of flour to thicken it up, and you've got the best taco sauce possible!

Central Market is gearing up for its annual Hatch Chile Festival with a recipe contest, pork tenderloin apples classes, and a new chile-themed cookbook starting August 17. The festival, which spans two different weekends, celebrates the arrival of more than eight truckloads of the chile from Hatch, New Mexico. The festival runs Friday, August 21 through Sunday, August 23 and Friday, August 28 through Sunday, August 30.

At $9.95, it's one of the most expensive things on the menu, and can easily feed two (especially if an order of Mofongo is added). It consists of roast pork, fried pork (chicharrones), fried plantains, fried chicken (some of the best in the city), Arroz con Gandules, and beans.

As fabulous as her recipe is, it is also labor-intensive, and the directions are written in Julia's thorough style. "Cover the casserole and set it in the lower third of the oven," she advises, adding that you may also cook the stew on top of the stove, in an electric skillet, or a kettle.



Broccoli Bernaise: This easy beef stew slow cooker dish is often misrepresented as being "fattening." In reality it really isn't. It is a dish very high in minerals and when properly prepared, is loaded with fresh herbs. Also when properly prepared, you will get all of the nutritional and health benefits of the broccoli!

In a large stock pot, place leg bones and enough cold water to cover. Bring to a rolling boil, and boil approximately 3-5 minutes. Remove from heat, and rinse under cold running water. Thoroughly clean stock pot, and return cleaned bones to pot. Add 6 quarts of water bring to a rolling boil, and reduce to a gentle simmer. Add onions, ginger, star anise,cloves, cinnamon stick, cut up flank steak, salt, fish sauce, and rock sugar. Simmer about 1 1/2 hours, and remove flank steak. (Steak should be done through but chewy) Cool steak in bowl of cold water to keep it from drying out and turning brown. Refrigerate flank steak. Continue simmering broth for approximately 3 hours, skimming scum and fat from broth occasionally, and stirring bones from time to time.
